First and foremost, I want to congratulate you for taking the challenge of homeschooling. It is a very rewarding experience for both the parent and the children. Second, as a homeschooler, don't forget to take time for yourself. You do need time away from the children whether it is for deep cleaning, to go out on the town for an evening, or to take a stress-free weekend trip with friends or your significant other.
Let's start with your comment on a being a packrat. The first step to organizing your home and making it easy to assign your children daily chores is the process of decluttering. Using the decluttering tips along with my room by room instructions will help you tremendously!
It seems that you realize that organizing a whole home is a process, not a one-time event. You will need to schedule blocks of time in which you can work on organizing a closet, a room, a storage area, a cabinet, etc. Set realistic goals and strive to meet them.
